My morning had just been concluded with these sweet mini peppers (stuffed with cilantro pesto). They were good! Maggie ate two pieces, which made me and her Dad happy!

POV Inspection Hulabaloo

Maggie’s Dad just came home from work and he told me that they had a POV (Personally Owned Vehicle) Inspection today. He hadn’t returned Miss B’s pot (which had Spanish rice in it when she and other guys in their company came over for lunch last Saturday) yet, and so the sergeants saw it. They reported to the commander that Maggie’s Dad HAS POT in his car! The commander and a lieutenant immediately went to investigate, only to find an empty pot with a lid on it! Silly sergeants. Haha!

I never learned how to ride a bike. My mom was overprotective, and I also wasn’t an adventurous kid. I was scared of many things. 

Maggie, on the other hand, loves her bike. She has been looking forward to sunny days so she could go out for a bike ride. It is a joy to see her enjoying the things I didn’t when I was small.

Sautéed Tofu and Asparagus (with lotsa garlic 😋)… Lunch is ready! 

Ingredients:
1 block firm tofu
1 bunch asparagus
2 cloves garlic
1/2 regular-sized onion
1 1/2 tbsp vegetarian oyster sauce 
1 tsp pepper
1 tbsp olive oil
3 tsp fried garlic

Slice tofu, asparagus and onion into strips. Crush the garlic. Heat oil in pan. 

Throw in tofu slices when oil is hot enough (they will stick if oil is not hot enough). Sauté until they turn golden brown. 

Add garlic and onions. Sauté for a minute. Add asparugus, oyster sauce and pepper. Mix everything, and cover the pan for about two minutes.  

Turn off heat. Transfer to a plate, sprinkle with fried garlic and serve! Enjoy! 😊
